That's what happens in the 02 Corolla. If I turn the vents up to defrost, it
starts freezing in the car, with no compressor light on, because the
compressor is getting turned on without the light.

In my Auris, there is a button for defogging the windscreen, it turns on
the A/C but other than that the A/C stays off unless you actively select
it.

Funny thing is that when the air is cool, it is also dry - cold air
doesn't hold much water. So when the A/C on, it cools the air and dries
it. The neat thing is that most cars today have controls that let you
redirect the heat from the engine into the cabin (this is also known as
a "heater."). By using the heater and the A/C and redirecting the air to
the windshield, you end up with warm, dry air, which is ideal for
defogging windshields. What will car engineers think of next?
